Q. What is the purpose of naming my own boss as a "real saint"?

A. It shows that you appreciate a workplace where you are a valued member of a team, so you want to thank your boss for making that possible.

You probably realize that a LOT of people have really abusive supervisors, to the point where it ruins their job. If you have a good boss, then you are very lucky, so you'll receive great satisfaction in knowing that you have acknowledged this special person in your work-life.
